classic broccoli quiche.
I'm often presented with exploratory questions regarding the veganizability (it is a real word..) of many "traditional" dishes and desserts. One such food that often raises the eyebrows of my family, friends and coworkers is the quiche. While vegetable quiches and similarly styled dinner pies are common fare amongst meat eaters, many inquiries revolve around the the creamy custard encasing a particular filling. Traditionally prepared with a blend of eggs and milk or cream, an edible veganized version may onset suspicious stares and doubtful scoffs. Disbelievers, cast your skepticism aside, for a vegan quiche is entirely possible, and entirely delicious!
The recipe I used made its debut tucked inside the publication of possibly one of the greatest vegan cookbooks to date. Vegan Brunch is a regular go-to cookbook in my kitchen, and offers an array of brunch meals with enough variety to please any palate during any meal of the day (because everyone knows that breakfast is best when eaten for dinner). This was the first time I've ever made a quiche, vegan or not, and it was pretty satisfying. The texture is what I remember of dairy-laden quiches. The flavor was good, but next time I will increase the seasonings, as the quiche itself was a little bland.

All I want to do for the next five months is hang out in my backyard during the day, cooking intermittently. At night I would like to be nestled in front of the fireplace with Merlin, watching movies and cooking intermittently.

Moroccan-Spiced Eggplant and Kale
Moroccan-Spiced Eggplant and Kale
1 medium onion, thickly sliced
1 green bell pepper, sliced3 cloves garlic, minced
1 medium eggplant, chopped
2 tablespoons Moroccan Spice Rub
1 can roasted & diced tomatoes (feel free to use any kind of canned tomatoes or tomato sauce)
2 cups kale, washed and roughly chopped
1/4 cup olive oil, divided
Serve this on top of couscous, inside pita or as it is.

Farmer's Market Bounty : peaches, asian pears, 7 kinds of bell pepper, white and purple baby eggplants
I've been staring at this screen for a good twenty minutes, trying to dip into my brain and provide some words of substance to accompany the plethora of food porn I am about to post. I have yet to uncover an iota of intriguing information or story. I've operated within a particularly rigid and boring routine these past 2 weeks. work, eat, sleep. Oh, the Sims 3 has made appearances, and I've cooked some food, but little more than that. Oh, Matt and I returned to Tallahassee for a weekend! We saw some much-missed friends and I cleared out my old apartment. It was a short weekend, but well worth the 15 hour drive.

Eggplant and Zucchini Rollatini

That being said, work has left me drained. I'm working 5 days a week, leaving the house at 6AM and returning home around 5PM. Needless to say I'm exhausted and have been alternating between mildly dressed up frozen burritos, salads, and pasta. Not this weekend, I told myself. Matt and I have been on an eggplant binge for the last few weeks - they are plump and deliciously cheap at the farmer's market - and I've had my heart set on eggplant rollatini all week.
I breaded and baked the eggplant slices, and decided to throw in some sliced zucchini. It's filled with the cashew-ricotta from veganomicon and some lemon basil from my garden. Everything turned out wonderfully...better than I anticipated. Time-consuming and ingredient-heavy meals have a tendency to be altered significantly during my cooking process. I'll usually eat 1/3 of the meal during the time spent in the kitchen, tasting this and that until I'm too full to ever sample the final and complete dish. Not this time around. The effort and time spent on this meal was worth the reward.

Keen on Peaches
Vegan Peach Cobbler

2/3 cup light agave nectar
1 1/2 cup flour
1 tablespoon cornstarch
1 tablespoon light agave nectar
1/4 cup water
1/2 teaspoon cinnamon
2 1/4 teaspoon baking powder
4 cup sliced peaches (about 6 medium peaches)
3/4 teaspoon salt
2 teaspoon lemon juice
3/4 cup soy or almond milk
4 tablespoons vegan butter
Cut vegan butter into flour, the baking powder and salt until mixture resembles fine crumbs. Stir in milk and agave. Drop dough by the spoonful onto hot peach mixture.
Bake until topping is golden brown - about 25-30 minutes.
